Zin Tri-tip

  • 1 good size tri-tip (if untrimmed, score the fat side several time to prevent curling)
  • 1 large purple (of course) onion chopped into thick rings
  • at least, 1 tablespoon chopped, mashed, or pureed garlic
  • 1 bottle of Zin (guess what brand we use?)
  • A generous supply of garlic or onion salt, the same amount of pepper (we use Montreal Steak Seasoning). People that eat at our house tend not to be afraid of spices, so there is a liberal amount of crushed red pepper added here as well.
  • Recommended: fresh Italian basil/oregano (dried is Ok, if you crush it between your fingers as you are adding it).

    Let tri-tip marinade in the refrigerator for at least one hour. The longer you marinade the more purple your steak will be. Grill on hot coals, fat side up to sear in flavors, until desired doneness (approximately 5-10 minutes). Before this happens, place onion rings on the grill to enjoy grilled Zinfandel onions with your meal (that's why the large pieces are recommended).
